  • If you have always wanted to experiment with preserving and fermenting your vegetables, then this workshop is made for you!

    Emilie and Pierre will guide you through the fascinating world of fermentation by explaining the basic principles.

    You will also learn about the cycle of the seasons, seasonal vegetables and their use in cooking.

    Once the vegetables have been thoroughly cleaned and cut up, they will be prepared for potting.

    With a little salt and a few tips, you can start the lacto-fermentation process.

    That's it! You will finally have made your first vegetable preserves.Ā 

    Throughout the workshop, you will be able to taste the most delicious preparations.

    Preserving fruit and vegetables is certainly the best way to (re)connect with the seasonal cycle. In this workshop you will learn all about preserving and its secrets!

    You will leave this workshop with 1 jar of vegetables, but also an explanatory booklet so you don't forget anything!

    This workshop is offered in several languages simultaneously. The artisan will adapt the language of the workshop to the participants present.

    Meet Emilie & her team

    Fermentation Specialists

    A trained anthropologist and lifelong gourmet, Emilie is now a fermentation specialist. Her encounter with Pierre, her companion, has only increased her curiosity for the different culinary worlds.

    Thanks to her initial training and her Polish origins, she is particularly interested in the know-how of the traditional farming countries of Central Europe. The many evenings spent in Polish kitchens observing the intelligence and poetry of expert hands have left a deep impression on her.

    Pierre loves exploring tastes and flavours. His experience of vegetarian cooking, world cuisine, French cuisine and fine pastry-making has refined his skills and sharpened his passion for flavours.

    The (re)discovery of certain products and old or avant-garde know-how is the focus of his creativity.

    Cultivating their vegetable garden and harvesting their products have taught Pierre to cook with patience, humility and simplicity.

    Pierre and Emilie have been together for over 15 years now. Both passionate about cooking, they decided to start a vegetable garden. A decision that may seem trivial, but it changed the course of their lives! With an abundant vegetable garden, Emilie took an interest in the best way to preserve her crops and discovered fermentation. Together with Pierre, she founded ItinƩraire Bis Gourmand.

    This project promotes healthy, tasty and convivial food! Much more than just preserving seasonal fruit and vegetables, ItinƩraire Bis Gourmand aims to be a canning facility for knowledge and techniques. Far from any form of mortifying museification, Emilie and Pierre experiment with them, incorporate them and share them. In order to do this, they base their project on three types of action: Preserve, Pass on and Innovate. It is an invitation to take a different path and to be surprised by it.

    They offer their workshops at Molleke, a place entirely dedicated to the promotion and diffusion of a more sustainable lifestyle.

    Super atelier! Jā€™ai vraiment apprĆ©ciĆ© la faƧon dont Emilie a partagĆ© son savoir-faire et ses connaissances sans prĆ©tention. Elle y met beaucoup de passion et de sens. Ce fĆ»t pour moi une matinĆ©e trĆØs instructive et conviviale qui donne envie de tester plein de choses par la suite. Chouette moment dĆ©gustation de ses diffĆ©rentes prĆ©parations Ć  la fin, un dĆ©lice. Merci!

    Un super atelier oĆ¹ Emilie partage avec beaucoup de pĆ©dagogie, dā€™humilitĆ© et de sĆ©rĆ©nitĆ© son savoir faire. Et on termine en dĆ©gustant quelques pots de la production dā€™Emilie avec des suggestions d'assaisonnements hyper gourmands ! Hyper instructif et une belle rencontre !

    J'ai rƩcemment participƩ Ơ un atelier de lacto-fermentation animƩ par Emilie, et je dois dire que cela a ƩtƩ une super expƩrience ! Non seulement j'ai appris les bases de la lacto-fermentation, mais j'ai aussi dƩcouvert comment pimper une choucroute avec du gingembre, de l'ail, et du piment. Emilie fait preuve d'une grande pƩdagogie, en rendant l'apprentissage Ơ la fois amusant et accessible. Je recommande vivement ses ateliers Ơ quiconque souhaite explorer les bienfaits de la fermentation tout en expƩrimentant de nouvelles saveurs. Un grand merci Ơ Emilie pour cette belle dƩcouverte !

    Super atelier avec Ɖmilie, Ƨa fait plaisir de rencontrer des gens qui aiment partager autant šŸ˜Š chouette dĆ©couverte sur la conservation des lĆ©gumes par la lacto-fermentation. On a pu prĆ©parer une recette Ć  base de chou, goĆ»ter les recettes dā€™Emilie qui Ć©taient dĆ©licieuses.     Quelle belle dĆ©couverte ! On a particuliĆØrement aimĆ© la faƧon dont Ɖmilie s'est prĆ©sentĆ©e et nous a partagĆ© son savoir-faire. Elle nous a touchĆ© par son histoire, sa simplicitĆ© et sa sincĆ©ritĆ©. Quel plaisir de mettre les mains Ć  la pĆ¢te, de sentir les bons produits sous nos mains, de rire avec les autres participant.e.s en dĆ©couvrant le processus et les rĆ©sultats... On a Ć©tĆ© sĆ©duites par les recettes, des associations dĆ©licieuses, avec des agrumes, des Ć©pices, ... On s'est amusĆ©es et rĆ©galĆ©es ! Un moment de partage qu'on oubliera pas de sitĆ“t !     Merci Ɖmilie pour cet enrichissant atelier. Non seulement, nous avons reƧu des explications claires, nous avons appris comment faire mais aussi, et je trouve cela tout aussi intĆ©ressant, nous avons appris comment agrĆ©menter ces lĆ©gumes lactofermentĆ©s. Ƈa mā€™a permis dā€™imaginer plein dā€™associations intĆ©ressantes. Jā€™ai vraiment hĆ¢te maintenant de tester toutes ces idĆ©es qui ont fusĆ© dans ma tĆŖte. Un atelier extrĆŖmement abouti : thĆ©orie, pratique, inventivitĆ©. Parfait !
