Meet Yannick, a fermentation specialist, and learn how to make your own kombucha!
First of all, Yannick will take the time to tell you about his background and how he became passionate about fermentation. He will explain the basic principles of fermentation and will let you sample some of his recipes.
Then, you will prepare together the various ingredients required in order to create your kombucha, which you will then put into a jar.
After this interesting and friendly workshop with Yannick, you will leave with your own kombucha to enjoy at home!
Workshop location
Yannick's workshop is located a few minutes' walk from the Pannenhuis metro station (line 6) and the Dieudonné Lefèvre bus stop (line 88).

Practical information
The workshop is not heated, and for good reason! Yannick and his team ferment the lactos at room temperature and they don't want to rush these fermentations. The workshop varies between 15 and 25 degrees throughout the year. Dress warmly!
Meet Yannick & his team
Fermentation Specialist
It was in 2017 that Yannick decided to switch careers and start his own business, with a desire to share his passion for fermentation.
He wants to test all the possibilities that fermentation has to offer, moving beyond the popular classics such as beer, bread, or kombucha. He therefore performed various experiments with vegan charcuterie, miso, and even vinegar. A passionate convert, but also very socially engaged, he uses only local products.
His openness and his teaching ability allow him to transmit his passion through his own workshop, sharing all the mysteries of fermentation!

Super workshop avec un artisan passioné et passionnant. Nous avons déjà fait plusieurs workshop avec Yannick et c'est toujours une joie. Il a beaucoup de connaissance et adore partager ses expériences - une pépite! Depuis nous faisons de la kombucha à la maison et on adore le résultat!

Pas mal de théorie à retenir, surtout si vous n’avez aucune expérience en fermentation (comme moi). J’ai pris note mais un résumé d’une page serait bienvenu. Coté ambiance on voit que Yannick est passionné ! Ça fait plaisir et ça motive à apprendre. On repart avec un scoby pour se lancer. J’aimerais arriver à faire le kombucha au café ! Meilleur kombucha que j’ai goûté de l’atelier et en général !

Chouette atelier qui explique bien les bases et on goûte différents kombuchas avec différentes saveurs. On repart avec un Scoby. Il ne reste plus qu’à se lancer !

I loved the workshop! First hour is dedicated on the theory behind symbiotic fermentation, coupled with Kombucha tasting. Second hour is a bit more practical, in the atelier, learning the basics to get started. You leave with a SCOBY in a jar and access to the wiki to make your first Kombucha.

Très chouette moment de partage autour de la komboucha. Ravie d'être partie avec un scoby pour démarrer mes petites préparations. Le moment dégustation est juste génial, ça donne des idées pour nos créations.

Très chouette activité pour découvrir le kombucha sous toutes ses coutures et repartir avec de l'inspiration pour de prochaines recettes. Le petit + : repartir avec son scoby pour pouvoir continuer l'atelier à la maison :)

Ma mère à découvert récemment la Kombucha, c'est atelier était un bon cadeau pour lui faire découvrir les secrets de sa fabrication. Je recommande vivement cette initiation à tous les amateurs de kombucha et à ceux qui souhaitent en apprendre davantage sur ce processus subtil.

Très chouette animation dans une ambiance conviviale, explications en FR et EN poussées et très intéressantes. On déguste plein de kombuchas différentes qui illustrent les possibilités infinies de saveurs et de fermentations et on repart avec un beau scoby, plein de connaissances et pleins d'inspirations pour expérimenter à la maison !

J'achetais déjà du kombucha depuis un bon bout de temps, et j'ai eu envie de voir comment ça se fabriquait. J'ai beaucoup apprécié les explications, la démonstration, les réponses aux questions, la convivialité de l'artisan et du lieu. Je recommande.

Très belle rencontre et très chouette atelier. Je compte faire mon kombucha dans les jours à venir. J'aurai aimé un support papier car le QR code renvoie essentiellement à des explications en anglais.
