  • Welcome to La Burrata Cheesemaking Workshop! 

    Ornella and Roberto welcome you to this cheese making workshop, where you will learn how mozzarella, burrata and stracciatella are made! This workshop is unique, because you can't really learn how to make burrata anywhere else in the Netherlands. 

    Ornella and Roberto begin with a brief introduction about the cheese making process and what you will be doing. Then everyone gathers around the table and you get to work transforming curds - the dough formed after milk fermentation - into mozzarella and stracciatella. You do each step yourself, with guidance from the cheesemakers, of course.  

    Finally, you fill the mozzarella with the stracciatella mixture. This step is challenging, but you will definitely be rewarded for it. The workshop then ends with a tasting, where you can enjoy your own freshly made burrata. 

    Although you unfortunately can't replicate the process of making curd at home due to temperature sensitivity, you will leave with your homemade stracciatella and burrata to enjoy later.

    If you want to continue making cheese and you want to try making cheese at home, ask Ornella and Roberto: they will give you all the information you need to replicate the process at home.

    Meet La Burrata Cheese Factory

     Meet Ornella and Roberto, the proud owners of La Burrata Kaasmakerij. Ornella, originally from Campania, Italy, oversees both the administrative and production sides of the cheese factory. Working alongside her is Roberto, who hails from Puglia, Italy. A former veterinarian, Roberto found his passion in cheesemaking and now dedicates his time to creating the perfect burrata.

    Since moving to the Netherlands in 2019, Ornella and Roberto have been committed to using locally sourced ingredients in the production of their cheeses. Their cheeses are meticulously handmade using Dutch milk and traditional Italian techniques, resulting in a blend of cultures.

    In addition to cheese production, Ornella and Roberto have decided to organise workshops to meet cheese lovers and share their knowledge and passion for cheesemaking.

    Join Ornella and Roberto on their journey to bring the freshest burrata to the Dutch market and learn first-hand about the craftsmanship behind their delicious cheeses.
