The workshop in detail

  • Step into Nicole's kitchen and learn everything you need to know about sourdough! The workshop starts with an introduction to Nicole and her background.

    Next, Nicole will demo working with the dough, talking participants through the process involved. Participants will have the chance to take part in each stage of the process and once the dough is ready it put aside to prove. 

    As your sourdough rises, Nicole will show you other uses of sourdough and together you'll create crisp crackers and delicious pancakes, made with left over starter, for a quick taste. 

    Then, it's time for creativity! Design and bake your own mini focaccia with fresh toppings, and join Nicole in crafting pizzas ready for the oven. 

    Between baking and laughter, enjoy a delicious lunch made from the very food you've created. Not to mention a freshly baked loaf and a sourdough starter for each participant to take away!

    Get ready for an unforgettable day filled with flavours, fun, and flour!

    Meet Nicole

    Baker and Chef

    Meet Nicole, Baker and health food chef based in Highgate. 

    Nicole had always loved cooking and in 2019 she started training professionally with a focus on plant based cooking. During the covid lockdown of 2020 she began selling bread from her home kitchen and still runs weekly deliveries of fresh sourdough and prepared meals in her local area. 

    Nicole creates a welcoming environment in her large and bright kitchen and her workshops are fun, hands on and informative. Participants of all experience levels are invited to join these relaxed cooking classes which all end with delicious treats!

    I did Nicole’s 4 hour sourdough baking class with lunch and it was such an incredible way to spend a Saturday. Nicole is super friendly and so knowledgeable about the sourdough process, I really came away feeling equipped to give it a go myself. She’s also a phenomenal cook and we got to enjoy her wonderful food alongside our fresh bakes at the end of the class. The class covers so much and I came away with many more recipes than I had anticipated. I would strongly recommend doing any of Nicole’s classes and will definitely keep my eyes peeled for more classes she might offer in the future!
