  • Join Patrick for a workshop in the cosy atmosphere of Solla, a grocery-restaurant in the 13th arrondissement of Paris. With the help of Chef BĂ©atrice, you will learn the basic techniques for cooking tofu: how to marinate it, which vegetables and spices to use, and how to adapt it to different dishes and seasons.

    During the workshop, you'll make one dish yourself or in pairs, using the tools provided, and watch as three other recipes are prepared, with step-by-step explanations. The programme offers a balance of Asian and Western inspiration, using simple, seasonal ingredients.

    At the end, you'll share a light meal with other participants or go home with a sample of each recipe. Remember to bring boxes to take your creations home.

    You'll leave with four simple recipes to try at home: a salad, a soup, a stew and a tofu stir-fry to adapt to your own tastes!

    Meet Patrick

    Producteur de Tofu

    Ancien directeur marketing, Patrick dĂ©cide en 2022 de changer d'univers, en se lançant dans un tout nouveau projet entrepreneurial. Ce passionnĂ© de bonne cuisine dĂ©couvre en effet la fabrication artisanale du tofu pendant le confinement : une vĂ©ritable rĂ©vĂ©lation, qui l'amĂšnera progressivement Ă  en faire sa spĂ©cialitĂ© ! 

    Patrick travaille aujourd'hui dans son laboratoire situĂ© sur un domaine hybride en Essonne, Ă  la fois centre d'accueil pour les personnes handicapĂ©es et vivier d'ateliers d'artisans. 

    Engagé pour une production responsable, il achÚte son soja dans le Loiret, et vend ses produits en épicerie ou sur les marchés. Son objectif ? Redonner au tofu ses lettres de noblesse, tout en lui permettant d'exprimer pleinement toute sa richesse gustative.

    Enthousiaste et pédagogue, Patrick souhaite désormais transmettre son savoir-faire à toute personne curieuse d'en apprendre davantage sur le tofu et ses secrets !
